Sausage Noodle Soup

Ingredients

1 package udon (thick noodles)

2 chicken stock

4 , cut into 1/2-inch diagonal slices

1 carrot, grated

2 green onions, sliced

1/4 celery, sliced

1/2 bok choy, thinly sliced

salt and freshly ground black pepper to taste

Directions

  1. Cook noodles according to package directions. Drain and rinse under cold water and set aside.
  2. Heat chicken stock in large pot. Add sausage, carrot, green onions, celery and bok choy, and season to taste. Simmer 5-10 minutes to lightly cook vegetables.
  3. Divide noodles among 6 bowls.
  4. Ladle in soup and serve.
