Pork Sausage Hash

Ingredients

2 red potatoes, cut into a ½-inch dice

1 large onion, cut into a ¼-inch dice

1/2 stick unsalted butter

1 (4 links), cut into a ½-inch dice

1/2 red bell pepper, ¼-inch dice

1/4 finely chopped green onions

1/2 green bell pepper, ¼-inch dice

1/4 salt

1/2 black pepper

1/4 cayenne

salt and freshly ground black pepper to taste

Directions

  1. Over medium heat, sauté the potatoes and onions in butter for 10-15 minutes, stirring occasionally. Add the sausage, bell peppers, salt, black pepper and cayenne, and continue sautéing until the sausage is browned, about 5 more minutes. Add more salt and pepper to taste and serve garnished with green onions. Serves 4-6
